Date Squares | Hallelujah Acres Canada

Recipe from Judy Fleming?s book ?In the Kitchen with Judy?


Preparation time:
20 minutes

Serving size: 9? square pan

Ingredients:?dates ? orange ? sunflower or pumpkin seeds ? coconut oil ? oatmeal ? pecans

Method:
This is my Raw healthy version of the traditional date squares my Mom made.

Filling
In your food processor add the following:

  • 2 cups organic dates (that have been pitted and chopped)
  • 1?large fresh orange, peeled

Process until creamy ? put aside

Date Crust:
In your food processor add the following and make into a crumble:

  • ? cup of each seeds & pecans (soaked for 2 hours then drained)
  • 2 tbsp coconut oil
  • ? cup pitted dates
  • ? cup oatmeal

This needs to be well mixed and should be crumbly

Grease your 9? square pan (or 10? pie plate) with coconut oil and spread the oatmeal mixture about 1inch thick.
Cover with a good layer of your date filling.
You can serve as is or cover this with another layer of the oatmeal mixture, pat down and serve as is or dehydrate for 1-3 hours at 105F.
Cut into 2? squares and serve. ?They keep well in the fridge for 3-5 days.
